Cauliflower Pizza Crust – Spinach Mushroom Pizza with Dairy Free options

My family’s favorite meal is pizza, so we have it often.  Our gluten free pizza crust recipes aren’t low carb so I didn’t know how I was going to enjoy pizza on Trim Healthy Mama.  I’ve eaten several different low carb variations of pizza since becoming a Trim Healthy Mama.  When I started on the plan, I didn’t care for cauliflower.  However, I have kept my mind open to cauliflower and eaten it because I know it’s good for me, and it’s an excellent ingredient for low carb substitute for bread, white potatoes, and pasta. 

I made the THM version of this recipe early on in my THM journey, but I didn’t care for it.  Since then I’ve developed a taste for cauliflower, and I tweaked the recipe. 

This is now my very FAVORITE pizza crust recipe!

Spinach Mushroom Pizza

CRUST: low carb, gluten free, THM S

(adapted from THM)

12 oz cauliflower, steamed and drained

3/4 cup egg whites

3/4 cup gluten free THM baking blend

1/2 tsp baking powder

Pinch of salt and pepper

1/2 garlic powder

1/2 tsp onion powder

1 tsp oregano

Preheat oven to 450.  Once you have steamed and drained cauliflower, put it in a food processor and puree.  Add egg and pulse until mixed well.  Add remaining ingredients and stir.  Place mixture on pizza stone or pan lined with parchment paper. 

Grease a rolling pin and roll mixture outward into a circle ensuring that the outer ring is a little thicker than the middle.  Before topping the crust, bake it in the oven for approximately 20-25 min.  Allow crust to cool slightly.

TOPPINGS:
Kite Hill almond milk yogurt or Kite Hill almond milk cream cheese (softened)
Pinches of salt, pepper, oregano
1 cup fresh baby spinach, chopped
1/2 cup sliced mushrooms
1/4 cup chopped onions

(We like to have black olives, chicken, artichokes as toppings sometimes, too. You can also have a personal choice dairy free cheese, or if you’re not dairy free just add about 6 oz mozzarella cheese.)

Spread choice of sauce over pizza crust.  Sprinkle on seasonings.  Add spinach, mushrooms and onions.  Broil in the oven watching pizza carefully until toppings are lightly cooked and golden.
