Crockpot Turkey and Rice THME, lowfat

As you know, one appliance that I simply cannot live without is my crockpot!  Crockpot meals are my favorites.  On days when we have a lot going on, it is so easy to just dump some ingredients into the crockpot and let it do all the work.  It’s almost like having our own chef because you come home with a warm meal but you didn’t slave over it in the kitchen.

If you’re going to be away from home from an extended period of time, this crockpot is ideal because it is programmable so you can set it to cook for a certain time and then go to warm mode which keeps your food warm until you get home and settle down to eat.

Yesterday I had lots of paperwork and household things to do after our school day, so I knew I wouldn’t have much time to cook dinner.  I pulled out one of our family favorites for dinner:

Crockpot Turkey and Rice
2 cups long grain brown rice
32oz organic vegetable broth (check liquid to rice ratio on rice package)
11/2 pounds turkey tenderloin
½ tsp salt
½ tsp ground black pepper
1/2 tsp dried herbs (rosemary, basil, sage) or 2 tsp fresh herbs from your garden (I used rosemary from mine)

Line crockpot with crockpot liner.Check your package of rice for the liquid to rice ratio.  Mine says 2 cups of liquid to 1 cup of rice.  Use whatever your package states.  Add vegetable broth, rice and seasoning.  Stir well.  Place tenderloin crockpot.   Cook on low for 7 hours.  Slow cookers can vary so get to know how well yours cooks.  Mine tends to take less time than most recipes.  Serve with a side of veggies. Makes approx 6-8 servings.  So easy!  Enjoy!
