Salsa Chicken THME

2 16oz jars of salsa (I buy Simply Nature organic medium thick and chunky salsa from Aldi)

1.5-2 lbs boneless skinless chicken breasts

2 15oz cans of black beans

10 oz frozen or two 15 oz cans white corn (optional-omit corn if you have blood sugar issues or are a slow loser)

1 bag on-plan tortilla chips or make Joseph’s pitas chips from cookbook (optional)

Dump first three or four ingredients into the crockpot.  Cook on low for 6 hours or on high for 4 hours.  If you will be away from home, program your crockpot to change to warm setting.  Once chicken is done, pull it apart like pulled pork and add it back to the pot.  Serve with chips.  For Trim Healthy Mamas, this would be an E, and you can top it with nonfat Greek yogurt.  Adding cheese and sour cream would make this a THM crossover or just a simply a healthy, gluten free dinner for anyone.

Freezer recipe: Just dump all ingredients except toppings and chips into a gallon freezer bag. Dump it out of the bag and into the crockpot when ready to cook. Cook on high 8 hours of low 10 hours. Or if you thaw in the fridge first, you can follow cooking instructions in original recipe.
