Trim Healthy Pumpkin Panckes THME

Fall is my favorite time of year, not just because it really speaks to all of my senses.  I love walking into homes and breathing in the bouquet of spices filling the air.  The vibrant colors of God’s creation are a glorious sight.  It’s lovely to hear sounds of people beginning to settle into their homes, routines, family gatherings after a busy summer.  It’s refreshing and calming to feeling the cool breeze and misty air all around me and the cozy warmth of cuddling under blankets with my blessings.  You can’t beat the tastes and flavors of fall with spices, pumpkins, nuts, squashes, and comfort foods cooked with love warming your body and heart.

I’d love to share this fall variation of Trim Healthy pancakes with you.  Pumpkin is one of my favorite flavors, and these pumpkin pancakes topped with sweetened maple flavored nonfat Greek yogurt and pumpkin spice are the perfect way to start a beautiful fall day!

Trim Healthy Pumpkin Pancakes (E)

Trim Healthy MamaPage 223
1/3 cup pumpkin puree (not pumpkin pie filling-it should be 100% pure pumpkin only)
1/2 tbsp. pumpkin pie spice

TOPPING
1/3 cup sugar free, plain non-fat Greek yogurt
1 scoop or 1/32 tsp Stevia; OR 1 tsp THM Sweet Blend
Splash of Organic Maple Extract 

Simply make the Trim Healthy Pancakes from page 223 of the book, but before blending add the pumpkin puree and spice.  Cook as instructed in the book.  Mix all 3 ingredients for topping in a small bowl, and top your delicious pancakes along with a sprinkle of pumpkin pie spice.  These pancakes are an E (energizing) meal, which means they use healthy carbs for fuel.  They are low in fat, sugar-free, low glycemic, and very filling!  ENJOY!
