Triple Layer Mocha Chocolate Cheesecake with Ganache

Chocolate and cheesecake can be a deadly (unhealthy) combination, BUT not in this case! I have the perfect dessert recipe for birthdays, family reunions, and summer gatherings. It’s low carb, gluten free, sugar free cake featuring two layers of chocolate cake and one layer of cheesecake. It is amazing! Your children and husband won’t even know it’s healthy. With every piece they’ll think they’re getting that forbidden treat, but you’ll know better!

Triple Layer Mocha Chocolate Cheesecake

This scrumptious dessert consists of a layer of chocolate cake, a layer of whipped mocha filling, a layer of cheesecake, another layer of mocha filling, another layer of chocolate cake and a topping of ganache.  Below are the adaptations and recipe which would be a THM S:

Chocolate Cake Layers (adapted from THM Special Agent Chocolate Cake)

Combine all of these dry ingredients:
1 cup Organic Coconut Flour
1/4 cup Organic Flaxseed Meal
1/4 cup Almond Meal/Flour
½ cup cacao powder
2 tsp. baking soda
2 tsp. aluminum free baking powder
4 tsp Sweet Blend Erythritol & Stevia Blend (this is all natural sugar free sweetener so no bleach, no addiction, and no blood sugar spikes)
1/4 cup Lily’s Dark Chocolate Premium Baking Chips  

In a separate mixing bowl or blender mix these wet ingredients:
10 eggs into blender
½ cup Organic Extra Virgin Coconut Oil
1 can full-fat coconut milk
1 tsp pure vanilla extract
Add dry ingredients, mix well, and divide between two round cake pans which have been greased with coconut oil. Bake on 350 for 50-60 min.  Allow to cool slightly.  Remove from pans and finish cooling.

Mocha Whipped Filling
3/4 cup heavy cream chilled
4 oz softened cream cheese
4 tsp Sweet Blend
1 tsp vanilla
1 tsp cocoa
1 tbsp brewed coffee
 Combine all ingredients and whip. 

At this point, you could simply put the two chocolate layers together with the filling in the middle, but why stop there?!?  I didn’t!  I made 1/2 of the Trim Healthy Mama Basic Cheesecake recipe on page 373.

Once the chocolate cake and cheesecake were cooled, I assembled the cake.  Chocolate on the bottom, whipped filling, cheesecake, whipped filling, chocolate cake.  Now for the topping…

Chocolate Ganache
1 cup heavy whipping cream
8 oz Lily’s chocolate chips

Simmer whipping cream on medium heat in small saucepan.  Remove from heat.  Whisk in chocolate chips until smooth.  Pour over top of cake and smooth over top allowing ganache to drizzle down the sides of the cake.  This is a dessert you and your family don’t ever have to say “no” to. It’s healthy and delicious dessert for any occasion which makes it the perfect combination!
