Chocolate Covered Raspberry Ice Cream – THM S, Dairy Free

While shopping for personal choice ice cream for my family this weekend, I was sad and frustrated because there are no on-plan, dairy free ice cream options. One of my daughters and I are dairy free for health reasons. She and I really wanted some ice cream.

So, I just decided to go home and throw some ingredients into the ice cream maker. It turned out perfectly! I’ll share with you! Enjoy!

1 can coconut cream (unsweetened)

5 cups coconut milk

1/3 cup Silk Dairy Free Heavy Cream

1/3 cup cocoa

1.5 cups frozen raspberries

1/3 cup sweet blend

pinch of salt

Mix all ingredients and put into ice cream maker following manufacturer’s instructions. (I melted some skinny chocolate and drizzled it over the top.) YUM!
