Peanut Butter Muffin in a Bowl, low carb, low fat, sugar free THMFP

I am pretty sure I’m not alone when I say desserts are my favorite meals.  I am so thankful to have healthy alternatives to some of the “foods” I used to enjoy.  I use the term “foods” loosely because I now know that those sweets aren’t real food that God intended for me to eat.

As you know, I am a Trim Healthy Mama.  This means that I no longer eat sugar, white flour, processed foods, and chemicals.  It also means that within my meals I limit my fuel source to either carbs or fat, but not both because having a high amount of two fuel sources causes your blood sugar to spike and your body to only burn one fuel and hold onto the other.

I love Trim Healthy Mama Fuel Pull snacks!  These are goodies which are low in both fuel sources, so low that you can pair them soon after eating either fuel source and they don’t cause a collision of carbs and fat.

My favorite Fuel Pull dessert is the “Muffin in a Bowl” on page 258 of the Trim Healthy Mamabook. It takes about 5 minutes to make.  It’s a hot, gooey muffin that I typically use as a dessert, like a volcano cake.

Besides the chocolate version, I am addicted to the peanut variation.  I can’t share the full recipe, but it is in the book.  I’ll also share my recommendation for oat fiber which is also in the recipe.  Oat fiber and defatted peanut flour are not ingredients you typically find at your local grocery store.

I topped my muffin with blackberries.  I actually had it as a dessert, but it could be eaten as a breakfast in the morning topped with nonfat Greek yogurt for extra protein.  Fuel pull foods like this muffin can be paired with either type of food source, which is why they are my favorites.  It was soooooo good!!!
